Ghraiba homs- Tunisian Shortbreads

Ghraiba is a shortbread loved in many parts of the world, each version carrying a bit of tradition and warmth. In Tunisia, Ghraiba Homs is a special treat, especially during Ramadan and Eid, when families come together over food and laughter.
Just like Indians enjoy their chai with biscuits or nankhatai, this crumbly, nutty delight pairs beautifully with a steaming cup of chai. The rich flavors melt together, turning a simple tea break into a comforting, heartwarming moment—one that feels like home, no matter where you are.

In this vegan Tunisian recipe, it is made with chickpea flour, sesame and almonds. This will make around 15 ghraibas but the size can be adjusted to make more, just adjust the baking time accordingly.

Ingredients:

  • 250 g chickpea flour , sifted
  • 150 g flour , sifted
  • 70 g sesame seeds , roasted
  • 100 g icing sugar
  • 270 ml vegetable oil
  • 30 g crushed almonds , roasted (optional)

Recipe:

  1. Preheat the oven to 180˚C.
  2. In a container, mix the two flours, the icing sugar, and ⅓ cup (50 g) of sesame seeds.
  3. Add the oil and mix until smooth.
  4. With the dough, form small balls.
  5. Gently press them and place them on a baking sheet lined with parchment paper.
  6. Mix remaining almonds and sesame.
  7. Sprinkle each ghraiba with this mixture and lightly press on them so the mixture adheres to them.
  8. Bake the ghraibas for 15 to 20 minutes.
  9. Watch closely during baking as the ghraibas must remain rather white.

Storage:

Ghraiba homs can be stored for about a month in a metal box.
